Enough doom and gloom, it's time for some food.

Dinner last night was a pretty simple affair, but is tasty.

- one pound of pasta, cooked ~2 minutes less than recommended time, drained
- one quart jar of ground beef, browned (about 1lb) and drained
- one jar spaghetti sauce
- one large can crushed tomatoes
- one small can sliced black olives
- one can artichoke hearts
- lotsa cheese
- bread crumbs
seasoning to taste (garlic and oregano)

combine everything but the cheese and crumbs in a 3-quart casserole, put the cheese on top, bread crumbs over that, and bake at 350F for 30-45 minutes (until the cheese is melty and starting to brown).

Adding a minced onion would've been good too.

Tasty! I do a similar pasta bake, but with italian sausage and peppers. 1 lb sauasage, 1 each onion, red and green peppers, garlic. Toss with pasta and sauce, the throw it in a casserole, cover with cheese and broil for 10 min or so. In a half hour you have food that looks like you slaved all day over.

Not an artichoke guy, but that sounds tasty enough that I'd probably give it a try. Homemade tomato-sriracha soup was on my stove the other night!

Yum!! Today was salads and light eating to make up for past luxuries, but tomorrow morning - Corn Biscuits with chive and sage topped with applewood smoked bacon and red eye gravy (you know, gravy made with coffee so we can cover all the food groups)
