Dinner: "Stuff"

I don't even know what the heck to call this concoction. It's not sweet'n'sour. It's not roasted. It's just "Stuff".

- 2-4 bell peppers, diced to bite-size pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- one can pineapple chunks, drained, juice reserved
- 1-2 tablespoons soy sauce
- 4 boneless pork chops or chicken breasts
- 2 cups rice
- hot water

Preheat oven to 350.

Brown the meat over medium heat.

Saute the garlic, onion, and celery in olive oil until the onion just translucent. Add the soy sauce, pepper, and pineapple for a couple more minutes.

In a large casserole, combine the pineapple juice, rice, and 4 cups hot water. Add the vegetable mix and stir together. Put the browned meat on top, cover loosely with foil, and put in the oven for 40-50 minutes until the rice is tender.

I'd probably call it "Polynesian," if only for the sake of having a name. Sure sounds delicious, though! Thanks for the addition to my list of food to make this fall.

MHA - it's a nice base dish for dressing-up to taste. Add more pineapple, or a diced apple, a handful of raisins, or a couple minced hot peppers. The base of rice and meat stays the same. Also, if you're doing it as a dish for more than four, the meat can easily be sliced after browning and put in that way; four sliced chicken breasts or pork chops can easily make this a dish for eight.

That sounds REALLY good. I'm not a big fruit eater, outside of apples which I love, and the occassional berry usually covered with pie crust, but my stepmom used to make this deep dish baked bean thing with bacon, red pepper and pineapple. I was glad to get the recipe before she passed away.
